Julien Froidefond 5875813f2f Refactor Docker configuration for PostgreSQL migration: Remove SQLite volume from docker-compose.yml, update Dockerfile to eliminate SQLite dependencies, and adjust README files to reflect PostgreSQL setup. Delete migration script and related documentation as part of the transition to PostgreSQL.
